White Bean & Potato Soup


This soup is simple to make, nutritious and lemony delicious. It's hearty, yet light and needs nothing more to accompany it than a slice of fresh sourdough.


Ingredients:

  • 1 yellow onion
  • 4 cloves garlic
  • 4 golden potatoes
  • 2 sweet potatoes
  • 3 cans white beans
  • 4 cups spinach
  • 1 can full fat coconut milk
  • salt & pepper
  • pinch of cayenne
  • pinch of thyme
  • juice of 1 lemon
  • 1-2 quart vegetable broth
  • 1 -2 Tablespoons olive oil


Directions:

Finely chop the onion and garlic and toss into a large soup pan with 1 or 2 tablespoons of olive oil. Sauté until the onions are translucent. Meanwhile, peel and dice your potatoes. I like to cut mine into small cubes, but If you like bigger chunks, that works too. Add potatoes and the remaining ingredients to the soup pot. Simmer until the potatoes are tender and the soup is the consistency you like. Garnish with a sprig of fresh thyme and a pinch of cayenne.
